Freezer Breakfast Burritos!

Have you thought about freezer cooking and just aren't sure where to start? Well, you would be a lot like me then. I love, love, LOVE cooking for my family but some days there just isn't enough time! I work full-time, have a family and go to college full-time! I am a very busy momma! So, with time being limited I have been looking for more ways to simplify our time.
I already menu plan our dinner meals for a whole month. I get asked all the time what I do for breakfasts and lunches. My usual answer is something quick for breakfast and leftovers for lunch, however, this month I tried something new!
 
That is where these make ahead breakfast burritos came in!
 
 
Here is what I did...

 
Now for the explanation since sometimes pictures don't say it all. :)
 
I bought two pounds of ground pork sausage and added one pound to each skillet. Browned and crumbled each pan and drained all the excess grease. Next, I scrambled 9 eggs for each pan, dumped it in and heated through. In one pan I added a 4 oz can of diced green chili's for some added flavor! After all the egg mixture was cooked I set up the station. I heated the tortillas in the microwave for a minute or so. I added about a 1/3 cup of the egg mixture to each tortilla, topped with shredded cheese and rolled them up! I kept this going until I was out of mixture. I was able to make about a dozen burritos per pan of egg mixture. So, 24 total. Once they were all rolled I wrapped them tightly with seran wrap. Tucked them into freezer bags and put into the freezer! Easy Peasy!!
 
When you are ready to heat one: unwrap from the seran wrap, wrap in a paper towel and microwave for a 1 1/2 to 2 minutes. Enjoy!!
 
These were delicious! The kids love them, the hubby feels like he can get a home cooked breakfast on the go and I don't stress that my family is left hungry after their cereal. :)

"Cowboy and Indian Tacos"

Who ever thought that dress-up is for girls is sadly mistaken. In our house, my boys play dress-up more often than my dolly! We are constantly morphing from pirates to knights, cowboys to indians, skaters to sports members. When they embrace a form they carry through all the way. So, tonight upon hearing we were having Indian Tacos, the boys decided they needed to play cowboys and indians! Thus, leading us to "Cowboy and Indian Tacos" because as my 6 year old says, "chili is for cowboys and fry bread is for indians".


Fry Bread Recipe:

2 cups flour
1 Tablespoon Baking Powder
1 Teaspoon Salt
1 Cup Milk
Approx. 4 Cups oil

In a large bowl whisk together flour, baking powder, and salt. Then stir in milk until a dough is formed. (FYI- I have also done this with only self-rising flour and milk mixed together into a dough. It cuts out a few of the ingredients) Turn dough onto a floured surface and knead until a soft pliable dough. (Don't over knead as this will result in tough bread.) Let rest for 5 minutes. While dough is resting put oil in a large pot or a large frying pan and heat over medium heat. I know the oil is ready when I splash a small drop of water into the oil and it sizzles. Pinch off small to medium sized portions of the dough and roll out until 1/4 inch thick. Drop your rounds one at a time into the preheated oil. Let brown on one side and then flip and brown on the other. Stay close as this will go very quickly. Once you remove set on a plate lined with paper towels to absorb the extra grease. Brown remaining rounds. This recipe yeilds approx. 6-8, 6" fry bread rounds.


Once all rounds are fried top with chili, onion, cheese, lettuce, tomato, olives and sour cream! These are also very delicious to just put butter with cinnamon and sugar or jam. Yum!!

Ok, hopefully you all attempted to try some of the meals from last week or began using your own weekly menu. I am going to change things up a bit. Menu planning helps with being prepared for what to make and reducing stress; this week I will include how much this will save on money. This week will also include one dessert. I like to bake something up on the weekends and we snack on it all week. I will try hard to include serving sizes and prep times.
In the past, when I went grocery shopping, I would grab anything that looked like I could throw it in and make a great meal. Now, with planning and reviewing our local ads I am shopping less and spending less on the few trips I do make. This makes me very happy! Like I mentioned before, I shop for my everyday essentials once a month, and I buy these items in bulk. This month on my once a month trip to Costco and Wal-Mart I spent $164.00. Then just for the missing ingredients I needed for last weeks menu I spent an additional $ 46.98 at Safeway. This may sound like a lot but do remember the $164.00 spent at Costco and Wal-Mart were things that will last one month or sometimes more.
I will also include my shopping list of just the ingredients I do not have on hand. Tomorrow, since I do my shopping on Sunday mornings, I will post my total of what was spent for the weeks worth of meals.

Here is my plan...

Saturdays I will post my weekly menu. For those of you who like to get your shopping done on Saturdays. Personally, I like to shop Sunday mornings, I feel my stores are less crowded at that time. On the first of every month, I usually stock up on things I need constantly throughout the entire month. (For example, bread, diapers, chicken, etc.) Near the first of the month I scan my cupboards and see what of my essentials I am missing. I compile a list and then head to where I find the best deal for the biggest bulk package I can buy. I usually go to Costco, Wal-Mart, and our local Franz bread store. These stores have what my family requires for day-to-day living, and usually for the best prices.

Next, I look at our local store ads to see what is on sale for the week. After seeing if I can come up with some great dinner ideas based off of what is on sale, I create my weeks menu. I pull out all recipes that I will need and add them to my Kitchen Binder, under "This Week" tab. I see what ingredients I already have on hand, then make a list of what's missing. Finally, I head to the store, usually I return feeling very proud of the money I have saved.

Our weekly menu usually only has a plan for dinners. I work Monday thru Friday, my husband works Saturdays thru Wednesdays. So, Monday thru Wednesday we tend to eat a lite breakfast, leftovers for lunch, and then I make what is planned out on the menu for dinner. Thursdays and Fridays, Jason is home with the boys. He usually makes a breakfast for everyone, a small lunch and then I make dinner when I get home, of course, using what is planned on the menu. Saturdays and Sundays I make breakfast, lunch and dinner.

My menus will be posted on Saturdays with their recipes. These menus will include dinner Monday thru Sunday. I try to mix it up often and add new recipes in whenever I can. I, also, try not to repeat the same meat more then two days in a row. This can be difficult because we eat a lot of chicken and rarely eat red meat. I do not like to cook with hamburger; so that is another ingredient you may want to incorporate into your meals more often then mine. I know for some of you, you will save more money where I do not, because I only buy boneless/skinless meat. (Something feels wrong to me about eating meat off a bone. :)) If you are willing to buy bone-in and skin-on meat you will definitely save more and I definitely encourage you to do so. I am trying hard to use more fresh and organic foods, less canned and processed ingredients. If you have any suggestions on how you have changed some of my recipes to include more fresh ingredients I would love to hear.

Remember, menu planning is difficult for some and easier for others. I love to plan a menu. With our hectic lives I appreciate the ease of knowing what I am making for dinner. I hate when 5:00 rolls around and I am left scrambling for what to feed my hungry family. I noticed on these nights I tend to cook less healthy or resort to eating fast food, yuck! Also, remember to be flexible. We all get special cravings for something you just gotta have, and we all like to go out on occasion, so I encourage you to mix up the menu, add to it, move things around, do what you need to do to suit you and your families needs.

I have used menu planning in phases, off and on for the last two years. I always go back and realize how much happier I am when using a menu. They sure make my life less complicated and I hope they will bring balance to your life as well!
